As new technology improves taste and texture, soy products are becoming more appealing to consumers worldwide, and soy oil remains the No.1 consumed oil in the world. Approximately 10 percent of U.S. soybean production goes into food products or ingredients for human consumption worldwide. Nearly 250 million bushels of U.S. soybeans are used for soyfoods, isolates and ingredients throughout the world.

The World Initiative for Soy in Human Health (WISHH) program is increasing consumption of soy protein in the developing world. Both commercial and volunteer organizations are considering using soy in their products.

In addition, the soybean checkoff is working with industry partners to increase the supply of low-linolenic soybeans to meet the demand for low-linolenic soybean oil. Low-lin soybean oil has no trans fats, which is a concern for food companies, particularly with trans-fat labeling becoming mandatory.
