CAKE MIX & TOFU COOKIES
(Modified variation with less oil)

1 package cake mix
½ cup silken tofu
¼ cup vegetable oil
1 egg

1. Combine all ingredients in mixing bowl and blend until all ingredients are moistened.
2. Drop batter by spoonful on greased cookie sheet.
3. Bake at 350 degrees for 15 to 20 minutes or until browned. Makes 24 cookies.

 

 

CHEWY PEANUT BUTTER BARS 

½ cup margarine
½ cup creamy peanut butter
1 ½ cups sugar
2 eggs
1 teaspoon vanilla
1 cup soy flour blend 

  1.  Place margarine and peanut butter in microwave safe bowl and heat on low setting until soft. 

  2.  Blend in sugar, eggs and vanilla. 

  3.  Add soy flour blend; combine well. 

  4. Place batter in 9x13-inch greased pan. 

  5. Bake at 350 degrees for 20-22 minutes or until lightly browned; cool.

  6. Sprinkle with powdered sugar or drizzle with chocolate.  Makes 2 dozen bars.

 

CUT-OUT BROWNIES

4 ounces unsweetened baking chocolate
¾ cup margarine
2 cups sugar
1 teaspoon vanilla
3 eggs
1 cup soy flour blend

1. Place baking chocolate and margarine in large microwave safe bowl.
2. Microwave on the defrost setting for about 5 minutes; stirring occasionally until it is completely melted.
3. Blend in sugar and vanilla.
4. Add eggs one at a time and stir well.
5. Blend in soy flour blend.
6. Place batter in 15x10x1-inch greased pan.
7. Bake at 350 degrees for 14-16 minutes or until it begins to leave the sides of the pan and wooden pick inserted comes out clean. Cool.
8. Use cookie cutters to cut shapes. Sprinkle with powdered sugar. Makes 1 ½ to 2 dozen brownies cut-outs.


EASY APPLE BARS
 

2 egg whites
2/3 cup sugar
½ teaspoon vanilla
½ cup soy-flour blend*
1 teaspoon baking powder
¼ teaspoon cinnamon


1.  In medium bowl, whisk egg whites, sugar and vanilla for 1 ½ minutes.
2.  Add soy-flour blend, baking powder and cinnamon; whisk for 1 additional minute. 
3.  Stir in chopped apples. 
4.  Pour into 8-inch greased square baking pan. 
5.  Bake at 350 degrees for 22 to 25 minutes, or until done when tested with a wooden pick.  Cool. 
6.  Sprinkle with powdered sugar, if desired.  Makes 1 dozen bars.

 


EASY DOUBLE CHOCOLATE COOKIES

¼ cup margarine
1 package (8 squares) semi-sweet baking chocolate
¾ cup brown sugar
2 eggs
1 teaspoon vanilla
½ cup soy flour blend
¼ teaspoon baking powder
½ cup mini semi-sweet chocolate chips
½ cup chopped pecans, optional

  1. In microwave safe mixing bowl, place margarine and 8 squares semi-sweet baking chocolate.  Microwave on high 1-2 minutes until melted, stirring every 30 seconds until smooth.
  2. Add brown sugar, eggs and vanilla. 
  3. Add soy flour blend and baking powder. 
  4. Stir in mini semi-sweet chocolate chips and nuts.
  5. Drop by tablespoon onto parchment covered baking sheet.  Bake 10 to 12 minutes or until cookies are puffed and set.  Cool 1 to 2 minutes before removing from pan to cooling rack.  Makes about 2 ½ dozen cookies.

EASY PIZZA DOUGH

1 cup warm water (105 degrees to 115 degrees)
1 package active dry yeast
½ teaspoon salt
½ teaspoon Italian seasoning
2 tablespoons vegetable oil
2 ½ cups to 3 cups soy flour blend
2 teaspoons cornmeal
½ cup tomato sauce
Toppings

1. Place warm water in large bowl and sprinkle with yeast; stir to dissolve and let stand 5 minutes.
2. Add salt, vegetable oil and 2 cups soy flour blend and mix well.
3. Add enough remaining soy flour blend to make a soft dough.
4. Knead about 6 minutes then place in greased bowl and grease top of dough.
5. Cover and let rise until dough is double in size; about 45 minutes.
6. Divide dough in portions for individual pizzas and roll out with rolling pin and place on baking sheets lightly greased and sprinkled with cornmeal.
7. Top with tomato sauce and toppings.
8. Bake at 425 degrees for 12 to 15 minutes. Makes 4-6 individual pizzas.


LITTLE FRUIT PIZZAS

1 package (18 ounces) sugar cookie dough
1 carton (8 ounces) plain soy cream cheese
1 carton (6 ounces) strawberry soy yogurt
Assorted fresh fruit
½ cup strawberry jam

1. Slice cookie dough and place three slices together on greased baking sheet.

2. Bake 10 to 12 minutes at 350 degrees until browned. Wait 5 minutes than remove cookies from baking pan and finish cooling.

3. Blend soy cream cheese and strawberry soy yogurt together and spread each cooled cookie with mixture.

4. Top with favorite fruits.

5. Heat ½ cup strawberry jam in microwave for 10 seconds. Drizzle over each pizza.

6. Makes about 6 fruit pizzas.

 


 

 

TRIPLE STRAWBERRY SMOOTHIE

1 container (10 ounces) strawberry soy smoothie
1 carton (6 ounces) strawberry soy yogurt
1 cup fresh strawberries
½ cup tofu

1. Place all ingredients in blender container. Whirl until completely mixed. Serve immediately
2. Makes 3 servings
